| 2 poundPotato; peeled, cubed and cooked |
| 1 cupCelery; thinly sliced |
| 1/2 cupOnion; finely chopped |
| 1/3 cupSweet Pickle Relish |
| 1 1/4 cupsMayonnaise |
| 2 teaspoonsSugar |
| 2 teaspoonsCelery seed |
| 2 teaspoonsVinegar |
| 2 teaspoonsPrepared mustard |
| 1 1/2 teaspoonsSalt |
| 2 Eggs; hard cooked, coarsely chopped |
Creamy Potato Salad Preparation
Place cooked potatoes into a large bowl. Separately, combine mayonnaise, sugar, celery seed, vinegar, mustard, salt, celery, onion, and pickle relish, mixing well. Pour mixture into potatoes, tossing lightly to coat. Carefully fold in the chopped eggs. Cover and chill thoroughly.
