Original recipe makes 2
1 cupoat flour; – just run the whole oats through the bl
1/2 cupold fashioned oats
1 egg
5 egg whites
3/4 cupzucchini; shredded
1/2 cupapplesauce
1/2 tspallspice
2 tspbaking powder
1 tspvanilla
1 tspCinnamon
2 tbspHoney
1 pinchsalt
1 tsplemon zest

Zucchini Apple Muffins Preparation

Mix everything together really well and let sit a few minutes. Spray your muffin pan with no-stick spray and fill the cups about 2/3 of the way full. Bake in a pre-heated 350 degree oven for about 25-30 minutes or until a toothpick inserted in center comes out clean.

I found the lemon zest and allspice very overpowering, I would suggest only using half the amount suggested or cutting them altogether. Otherwise, quite nice.
