A tasty way to use leftover rice.

"Great base for a fried rice meal. I made this per the recipe and was very quick and easy. It would be easy to add extra veges such as carrots or bean sprouts. My only negative comment is that it was a little dry but that may have been down to my rice as I used a mix of leftover white and brown rice. I can see this will be our go to meal when we feel like takeaways."

Ingredients

Are you making this? 
1 tbsp oil
2 Eggs; (up to 3), lightly beaten
3 green onions
1 clove garlic
1 tsp fresh ginger; grated
2 cups cooked rice; cold
2 tbsp Soy sauce
1/2 cup chicken; shredded, cooked
1/2 cup frozen peas; thawed

Preparation

Heat half of the oil and scramble the eggs until thoroughly cooked. Remove from pan and set aside.

Heat the remaining oil and add onions, garlic and ginger. Saute for 30 seconds. Add rice and stir-fry for 2-3 minutes. Add soy sauce, chicken, peas, eggs and season to taste.

Cook for a minute, and serve while hot.

Great base for chicken fried rice! I added celery, carrots, crushed red pepper, and extra garlic. Next time I think I will add one more egg, more chicken, and maybe a sprinkle of salt. Will be my new go to for fried rice in the future!

Very tasty - the only change I made was to add some of my own sauces that I enjoy to kick up the flavor :)

We loved this recipe....quick, easy and very tasty. Could easily add veg, bean sprouts or make it with beef. Very versatile ??
