Inspired by a recipe from Rachel Ray called Cowboy Spaghetti, this is a quick, low-fat, vegetarian meal.

Ingredients

1/2 lb whole grain spaghetti
1 tablespoon extra virgin olive oil
1 medium Onion; chopped
1 red bell pepper; cored and chopped
1 clove Garlic; minced
1 14.5-oz can black beans; drained and rinsed
1 14.5-oz can fire-roasted diced tomatoes
1/4 tsp liquid smoke
1/4 tsp red pepper flakes
5 dashes Worchestershire sauce
5 dashes Tobasco sauce
3 oz tomato paste
1/2 c reduced-fat cheddar cheese; shredded
fresh Italian parsley leaves

Preparation

Cook spaghetti according to package instructions in salted water. Meanwhile, sauté onions, bell pepper, and garlic in olive oil until peppers are softened. Add beans and tomatoes, bring to a simmer. Add smoke, pepper flakes, Worchestershire sauce, Tobasco, and tomato paste. Stir and simmer for 5 minutes. Serve sauce over pasta, topping with cheddar and parsley.
