Easy to make crock pot dish. You can alter the spicey level by using mild or hot enchillada sauce.
Put everything except cilantro, lime juice and tortilla chips into crock pot on about 350 degrees for about 6-7 hours or until pork is tender. Remove pork from crock pot to a plate so you can pull apart the pork with two forks shredding it. Return pork to crock pot along with cilantro and lime juice, continue to cook for 20-30 minutes. Serve with side dish of tortilla chips. Can freeze leftovers if you like.
