"A terrific guacamole recipe. Instead of using a potato masher, we made the guacamole using a traditional molcajete. Other than that, we followed the exact instructions and the results were wonderful! (Just remember, guacamole is all about the avocado...for great guacamole, you must use really good, in season, ripe avocados.) Next time, I will probably double the garlic, add some chopped fresh cilantro, and replace the cayenne with either a roasted and minced jalapeño or serrano chile." - sgrishkaYield: 0 Ready in 1 hours, 20 minutes

Guacamole Preparation
In a large bowl place the scooped avocado pulp and lime juice, toss to coat. Drain, and reserve the lime juice, after all of the avocados have been coated. Using a potato masher add the salt, cumin, and cayenne and mash. Then, fold in the onions, tomatoes, and garlic. Add 1 tablespoon of the reserved lime juice. Let sit at room temperature for 1 hour and then serve.
Serve with tortilla chips.
