Homemade Mayonnaise
Pulse egg yolk, and dijon in a food processor to combine.
Mash garlic clove to a paste with a little salt. Add to processor.
While processor is running, slowly drizzle in the oil in a thin stream until sauce is thick and creamy.
Stir in lemon juice and salt.
May be flavored with lemon or orange zest, red pepper, etc.
