| 4 filet mignon steaks | |
| 1 tablespoonolive oil | |
| Salt and pepper | |
| 1/2 cupbroth | |
| 2 tablespoonsUnsalted butter | |
| 1 teaspoonLemon juice |
Filet Mignon Preparation
Leave steaks out to bring to room tempature. Trim excess fat and pat dry with paper towels.
Place frying pan over med high heat. When pan is hot, add olive oil and heat until hot but not smoking. Add the steaks. Turning as needed about 10 min. Transfer steaks to warm plate and cover with aluminum foil.
Add butter to pan juices and cook until melted and then add lemon juice and broth and cook until reduced to about 1/4 cup. Pour sauce over the steaks.
