| 1 canblack beans; rinsed |
| 2 cansshoe peg corn |
| 2 clovesgarlic; (up to 3), pressed |
| 1 jalapeno; diced |
| 1/2 red onion; diced |
| 2 wholegreen onions |
| 1 splasholive oil; to coat |
| 1 splashwhite vinegar |
| 2 whole limes; juiced |
| 1 lime zest; if desired |
| salt and pepper |
| 1 tablespooncumin |
| 1 tablespoonchili powder |
| 1 pinchancho and/or chipotle chili powder |
| cilantro |
Black Bean and Corn Salsa Preparation
Rinse black beans in a colander. Then drain corn and put all of the ingredients into a bowl. Salt, pepper and spice to your taste. Let sit over night so that all of the flavors can sit. Use tortilla chips and serve!
