A great healthy and sweet way to get your antioxidants energy
Cut .25 -inch deep slit in skin of each potato lengthwise. Boil potatoes until done but still fairly firm. Drain water and cool potatoes in ice water bath to stop cooking. When cool remove skin and slice into .5 inch cubes.
Peel apple and slice into .5 inch cubes
In saute pan over medium heat add apple, spice (cinnamon or all-spice), salt and pepper. Saute for 3 minutes stirring frequently then cover with lid and saute for 2 more minutes. Remove lid and add sweet potato cubes.
Add maple syrup over apple potato mixture, lower heat and cook on low for 1 to 2 minutes. Stir and seve
