Very tasty and slightly lower fat than those using ground beef.
Make the sauce first using a food processor. Chop the onion and jalapeno. Add the tomatoes and minced garlic. Move mixture to a saucepan and add tomato paste, chili powder, salt, cilantro, red pepper and black pepper (if using). Bring to a boil, then let it simmer for 5-10 minutes, (longer is fine).
Brown the ground turkey. Spice it with the garlic salt and pepper to give a little more flavor to the meat. Drain the fat.
Using a large crockpot, lightly greased on the bottom so that the tortillas don't stick, layer 3 corn tortillas, then 1/3 of the meat, 1/3 of the black beans (if using), 1/3 of the sauce and 1/3 of the cheese. Do this 2 more times.
Turn the crockpot on low for 6-8 hours and you have a yummy, homemade, Mexican meal!
