Poor Boy Sandwich

Why is Mr. D posting a recipe for a bologna and cheese sandwich? Just in case you haven't tried it this way. When I was growing up, my family owned a country tavern in a ranching and farming community. My dad became well known for the awesome burgers he brought out of his small kitchen, but one thing that the ranchers and farmers often asked for was his poor boy sandwich. Three extremely simple ingredients make this sandwich, but yet it is hearty and of course, easy to do. If you haven't experienced a poor boy, give it a try. Bologna seems to take on a whole new personality when hot. Of course you can always jazz it up by adding fancier cold cuts and make it not-so-poor, but i really like this traditional method.

Original recipe makes 2
French bread; size and amount as desired
1 packageBologna
1 packageSliced Deluxe American Cheese

Poor Boy Sandwich Preparation

Preheat oven to 350

Slice the bread if necessary and layer with as much bologna and cheese as you like

Tightly wrap each sandwich in aluminum foil and bake for 20 minutes

Be careful of the hot cheese when opening :)

Notes

The french bread you use does not need to be as thick as that i used in the photo
