Dice apple, onion and tomato, add curry powder and fry in butter without browning for 10 minutes. Cut meat into small pieces and add to pan with chutney, jam, sultanas, sugar, sliced banana and coconut. Simmer gently for about an hour adding salt 15 minutes before serving with a mound of hot rice. Squeeze lemon juice over each serving.
