Who would think to dip a gingersnap into white chocolate! Tasty though.
In a mixing bowl, combine 2 cups of sugar and 1 1/2 cup of oil; mix well. Add eggs, one at a time , beating well after each addition. Stir in molasses. Combine dry ingredients; gradually add to cream mixture and mix well. Shape into 3/4 inch balls and roll in sugar. Place 2 inches apart on ungreased baking sheets. Bake at 350 degrees for 10-12 minutes or until cookie springs back when touched lightly. Remove to wire racks to cool.
Melt chips with 1/4 cup of oil in a sauce pan over low heat or melt chips in microwave per instructions on the package then add the oil ( I tend not to use all of the 1/4 cup of oil. More like 1 to 2 tablespoons. Sometimes I don't use oil at all).Dip the cookies halfway; shake off excess chocolate. Place on waxed paper lined baking sheets to harden. Yield: about 14-1/2 dozen.
