Lime Chicken Soft Tacos
Another great recipe passed down to me years ago, please note that it does make a differnece in taste and texture when using the shredded cabbage not lettuce however you may use whatever you please but please try it with the shredded cabbage you wont be disappointed, many people do not realize that alot of authentic dishes utilize cabbage not lettuce.

| 7 1/2 poundsSkinless Boneless Chicken Breasts; cubed |
| 1/2 cupRed wine vinegar |
| 2 1/2 eachLime; juiced squeezed |
| 2 tablespoonssugar |
| 2 1/2 tspnSeasoning salt |
| 2 1/2 tspnBlack pepper |
| 10 eachGreen onion; minced |
| 10 eachCloves garlic; minced |
| 2 tablespoonsDried oregano; crumbled |
| 50 eaFlour Tortilla |
| 6 eachTomatoes; diced |
| 3 cupsGreen Cabbage; shredded |
| 3 cupsBlended Jack and Cheddar Cheese; graded |
| 3 cupsPico De Gallo |
Lime Chicken Soft Tacos Preparation
1. Saute chicken in a medium saucepan over medium high heat for about 20 minutes. Add vinegar, lime juice, sugar, salt, pepper, green onion, garlic and oregano. Simmer for an extra 10 minutes.
2. Heat an iron skillet over medium heat. Place a tortilla in the pan, warm, and turn over to heat the other side. Repeat with remaining tortillas. Serve lime chicken mixture in warm tortillas topped with tomato, lettuce, cheese and salsa.
