Get wide based frying pan and fry chalottes and garlic in half oil and butter
fry until soft and add mashed potato
Add more butter if necessary
use wooden spatula to turn mash
scrape base of pan to integrate lovely golden fried bits into the mash
ready to serve in 10 to 15 munutes
