Original recipe makes 4 Servings
4 boneless skinless chicken breasts
2 teaspoonsdried thyme
Salt; to taste
2 tablespoonsolive oil
1 onion
1 largecarrot; chopped
3 clovesGarlic; minced
1 canchicken broth; 14.5 oz
1 cuprice
1/4 cupfresh parsley; chopped
1 wholeBay leaf
1 teaspoondried basil

Thyme Chicken and Rice Skillet Dinner Preparation

1) Generously sprinkle both side of chicken with salt and thyme.

2) In a large skillet, heat olive oil over medium heat. Brown chicken on both sides. Remove from pan and set aside.

3) Saute onions and carrots in olive oil until tender. Saute garlic for 30 seconds.

4) Stir in remaining ingredients. Place chicken back in skillet on top of rice. Cover and simmer for 20 minutes, or until the rice is tender and the liquid is absorbed.

My family loves this! We've made it twice and it's definitely a staple.

For me, the chicken was a bit dry and lacked the flavor I hoped it would have. The rice however was wonderful. I added celery, green and red peppers and some seasoned salt. If I make this dish again, I will probably use dark meat like chicken thighs or maybe even pork chops.

I am giving this a one, because I did as directed, even though I know that you usually you use two cups of fluid to one cup of rice!!!! I did as directed by the instructions, and there is NO WAY that anyone who made this as directed had their rice come out done.............Good idea, but very poorly written and executed! I have never given someone a one star rating..........but this recipe is very misleading and definately does not come out as per the instructions.

Used thin breast and it was amazing. The kids had seconds and next time I'll have to double the recipe. There wasn't a single drop left and my kids are very picky at dinner

We make this often. I use thin sliced chicken breasts, add celery and use quinoa instead of rice. Easy, healthy and tastes good.

This is fantastic. I'm always looking for one pot recipes to save time after a long day at work. Not only is this easy and cheap to put together it's also five stars for nutrition! I used frozen vegetables and brown rice instead but it was perfect!

This was just as advertised - very flavorful and satisfying. I did liberally season the chicken with salt and thyme, and added butter to the oil for extra flavor. Instead of rice, I made a batch of orzo pasta and seasoned it with Worcestershire sauce and Dijon mustard.

Wonderful! Even my picky eater complimented this dish. Some suggestions/alterations: 1. Coat the chic in mayo and then sprinkle with thyme. I also added rosemary. 2. Brown chic in a combo of 2 tbs buttr and 2 tbs of evoo

I personally loved this recipe, it was easy and fast. My boyfriend on the other hand didn't like it as much. I did do a few things different too. I grilled my chicken, and added peas with the carrots. The only thing I think I'll do differently next time is make it in a bigger pan lol.
