These sweet potatoes will have your family going nuts! Makes a great side dish to ANY meat!
Start by peeling the sweet potatoes. Cut into 1 inch pieces. Try to keep all the pieces the same size to ensure even cooking. Next, peel the garlic and set aside. Do not chop or mince! Then, peel and cut the onion into 1 inch pieces.
In a large mixing bowl, combine the cut potatoes, onions, and whole garlic. Add the rest of the ingredients and shake or stir, making sure everything is coated evenly.
Place into a large ungreased casserole pan. At this time, you can add crushed red pepper flakes to the top, or more tobasco (if you like things spicy). Cover tightly with aluminum foil and bake at 375 degrees for approximatley 1 hour. Then remove the aluminum foil and bake for an additional 20 minutes or so, checking every 5 minutes to see if the sweet potatoes are fork tender. Once they are, remove and let cool before serving.
