Any cut of chicken, such as thigh fillets or breasts, can be used for the recipe. For a stronger flavour, use small field mushrooms instead of button mushrooms.
Melt 2/3 of the butter in a large pan; add chicken drumsticks in a single layer.
Cook over medium heat, turning occasionally, for 4 minutes or until browned. Remove from pan. Drain on paper towels. Add mushrooms to pan, stir over medium heat until well browned. Remove from pan.
Add remaining butter, onion and garlic to pan, stir over medium heat for 5-10 minutes or until golden. Add flour to pan, stir over medium heat for 1 minute. Add stock, wine and tomato paste. Stir over medium heat until smooth, bring to a boil.
Return chicken and mushrooms to pan. Reduce heat to low; cover pan. Cook for 15 minutes. Uncover; simmer, stirring occasionally, for another15 minutes, or until chicken is tender. If liquid reduces too much, add a little more stock or wine. Season with salt and pepper before serving. Garnish with fresh thyme, if desired.
This dish can be made the day before and stored in the refrigerator. Reheat just before serving.
