An authentic Spanish Omlette or Tortilla
Preheat oven to 375.
Start by sauteing the onions, red pepper and potatoes in a cast iron frying pan with oil till cooked, add the bacon and heat through. Add chili flakes and salt and pepper to taste.
Mix the eggs and cheese together in a bowl and pour over the potatoes, bacon and veggie mixture, stir to mix thoroughly. Cook for about 30 seconds or until bottom of eggs sets. Put pan, uncovered, into the oven and bake for 5 minutes. The eggs should puff up and the cheese will melt on top. Remove from pan and cut in quarters with a pizza cutter. Top with cilantro or fresh parsley.
