A holiday classic
Preheat oven to 350 degrees. Mix and sift flour, Ginger, baking soda and cinnamon together three times. In a large bowl, beat shortening until creamy, gradually add 1cup sugar and continue to beat. Beat in egg and molasses. Add 1/4 at a time of the flour mixture to the molasses mixture and stir in until well blended.
Form into small balls (1Tbsp) and roll in 1/4 cup of granulated sugar. Bake for 12 minutes on ungreased baking sheets. Makes 4 dozen.
