Slow-cooked beef becomes so tender that it shreds easily with a fork. This shredded-beef sandwich is topped with an avocado aioli, a garlic-flavored avocado mayonnaise.
Trim fat from meat. Sprinkle with salt and pepper. If necessary, cut roast to fit into a 3 1/2 to 4 quart slow cooker. Place meat in cooker. Add onion, water, Worcestershire sauce, oregano, and garlic.
Cover; cook on low-heat setting for 8 to 10 hours or on high-heat setting for 4 to 5 hours. Remove meat from cooker; reserving juices. Using two forks, shred the meat. Serve meat on rolls with Avocado Aioli and shredded lettuce. If desired, drizzle meat with some of the reserved juices to moisten.
Avocado Aioli: In a small bowl, slightly mash the avocados with a fork. Stir in radishes, mayonnaise, lemon juice, garlic, oregano and salt. Cover and refrigerate for up to 24 hours. Makes 1 1/4 cups.
