This is adapted from Gary Rhodes recipe, to suit our family.
It is Yummy, simple and easy to do, just needs a little planning ahead so you get it on in time
Place the meat in a large pan of cold water, bring it to the boil, then discard this water.
Rrinse the pan and cover the meat again in cold water, add the bay leaves, onion quarters and the stick of celery.
Bring the pan to the boil and simmer for 1 1/2 hours
Add the Potatoes, Carrots and Leeks
Bring to a boil again ,then simmer for a further 1 hour
Remove the pan from the heat and allow to stand for 15 mins minimum,
(If it stands longer than 25mins or so, you may wish to bring it back up to a simmer on the stove)
Remove the onion quarters, celery stick and bay leaves
Add the fresh herbs and leave off the heat to stand for a further 5 mins.
Carve the meat,into chunks,(this may be tricky as the joint will prob be very tender, so you may just want to pull it apart.
Season the liqour to taste.
Serve a portion of meat, one of each veg in each bowl with a good ammount of the liquor poured over.
I often serve it with some optional additional potatoes as my family major on carbs!.
the inital bring the water to the boil and then discard is essential, as is rinsing out the pan afterwards. the meat initially produces white scum. and this boil and rinse gets rid of the excess salt that will otherwise make the dish less palatable.
dont peel the potatoes too early.
