An easy and very tasty desert when entertaining
Pre-heat the oven to 200 degrees C(390 F).
Butter the inside of a 9-10 cm round glass or ceramic baking dish or quiche dish.
Scatter the cherries across the base of this dish.
Place the eggs and sugar in a mixing bowl and beat with a wire whisk until they turn a lighter color.
Still whisking, gradually add the butter and then add the flour all at once.
Once the mix is evenly mixed, add the milk a little at a time and then the vanilla.
The batter should be very smooth and shiny.
Pour it over the cherries in the greased baking dish and bake it in the oven for 30-40 minutes, until slightly browned but still not quite set in the middle.
Let the dish sit for at least 15 minutes before serving.
It can then be refrigerated but it is best served warm or at room temperature.
Leaving the stones in the cherries gives it a lovely, almost almond-like flavour but you do need to warn the people eating it!
