Potatoes. Duck fat. Go!
Heat oven with roasting vessel to 500(F) degrees.
Toss potatoes with fat and salt. Rosemary, thyme or whatever wouldn't be inappropriate here as well.
Scatter about on pre-heated sheet pan/roaster, return to oven.
Turn heat down to 425(F) and roast for 40 minutes or so, until they browned, crisp and awesome looking.
