Breaded and deep fried causes the natural juices of the sausage to be retained which in turn causes a much more flavorable finished product.
Cut your sausage into 1 1/2-2 inch sections and set aside. Mix bread crumbs and parmesan cheese together and place in 1 gallon baggie or bowl. Beat eggs and place in a 1 gallon baggie or bowl. Put sausage in eggs and then in bread crumb mixture making sure to completely cover sausage. Heat oil and deep fry for 4-5 minutes or until cooked through. Serve immediately as an appetizer with mustard or as part of a main course with mashed potatoes or noodles. You can substitue italian sausage for any of your favorite sausage. I sometimes use garlic sausage.
You can use any sausage type to make this dish. I like italian or garlic sausage.
