Dee's Favorite
Whisk or mix egg yolks until blended; whisk in condensed milk. Add Key lime juice, whisking until blended.
Pour mixture into crust. Bake at 350? for 15 minutes.
Remove from oven; cool completely on a wire rack. Chill until ready to serve. Garnish, if desired.
Can be made into tarts. Freezes well.
For pies with more filling, triple the filling ingredients, and divide evenly between 2 graham cracker crusts.
If you are using Key Limes, they are a bear to squeeze - I bought one of those lime foldover squeezers which works great - if you hand squeeze you will need more than 24 limes. On a head to head taste test - there was only a slight difference - when I use the key limes I add some zest. (Dee thinks the pie is better when he see lots of little smooched key limes on the counter)
