Made with beef and spinach and kid-friendly.
1. Cook noodles according to package directions, omitting salt and fat. Drain and rinse under cold water; drain.
2. Combine soy sauce through salt, mix and set aside.
3. Heat a large skillet or work over high heat. Add canola oil to pan; swirl to coat. Add onions, ginger and beef; stir-fry 1 minute. Add mushrooms and garlic; stir-fry 1 minute. Add spinach; stir-fry 1 minute or until greens wilt.
4. Add vinegar mixture to beef mixture; cook 30 seconds, stirring constantly. Stir in noodles; cook for 1 minute or until noodles are thoroughly heated, tossing to combine. Add chili sauce if desired.
