Julia Child's Chocolate and Almond Cade
has been the traditional "adult" birthday cake as long as I can remember.
Melt chocolate and rum together.
Beat egg whites and salt separately until stiff peaks form. Add 1 T sugar.
Combine butter and sugar until fluffy, beat in egg yolks. Mix in melted chocolate and almond extract.
Alternately add egg white, almonds, and flour to the chocolate mixture.
Pour into greased and floured (or parchment-lined) 8" cake pan. Bake at 350* for 25 minutes or less. Cake should be "done" on the outer circumference and "pudding-like" in the center. DO NOT OVERBAKE
Let cool and frost with icing and decorate with almonds.
Cooking Tip: 2 Tbs rum = 1 Tbs rum extract = 2 Tbs coffee
