Stuffed Green Peppers with a Kick
Preheat oven to 350 degrees. Cut peppers in half lengthwise, remove seeds. Blanch peppers in boiling water for 3 minutes. Drain and rinse in cold water, then put into baking dish, cut side up. Combine half the cheese with all remaining ingredients and mix well. Stuff the peppers and bake for 45-50 minutes until meat is done and peppers are tender. Top with remaining cheese and bake for five additional minutes, or until cheese is melted.
This recipe was an experiment that was a success with my guy - who previously swore that he didn't like stuffed green peppers. We'll definitely make it again!
