Pair with California chardonnay
In a medium saucepan over medium heat, add the diced bacon and cook until crispy. Add the leeks and stir occasionally. Once the leeks start to cook, cover the saucepan and cook the leeks for 10 minutes over low heat stirring occasionally. Remove the lid from the pan and turn up the heat, cooking off all excess water the leeks release. Once the pan seems dry, stir in the cream and season with thyme and nutmeg. Place the lid back on the pan and set aside.
Preheat the oven to 400 degrees F. Season each fillet with salt and pepper. Place the egg in a small shallow pan. Dredge one side of the fish in the egg, and then press the egg washed side of the fish in the nuts making sure the nuts adhere. Set the fish on a plate. Place a large pan over medium heat, add the oil and place the fish in the pan, nut side down. Cook for a minute or two just until the nuts start to brown and cooks onto the fish. Turn the fish immediately and place the pan in the oven and cook the fish for 6 minutes or until done. To serve, evenly distribute the leek mixture in the middle of four plates and place the fish on top of the leeks.
Pair with an oaky California chardonnay.
