Heat oil in a large frying pan.
Add shallots/onions in a single layer.
Cook gently, until lightly browned.
Sprinkle sugar over shallots and continue cooking until carmelized.
Add wine and let the mixture bubble for 5 minutes.
Add 2/3 cup water.
Cover and cook for 5 minutes.
Remove lid and cook until liquid is reduced and shallots are tender and glazed.
Can also use port wine if you like.
