This is my Mom's recipe. My fondest memory is making these on Christmas morning with by parents and grand parents getting ready for the entire family come over for Christmas dinner.
Batter for Crepes.
Beat 6 eggs and sprinkle with salt until creamy. Then add 2 level cups of sifted flour and 1 cup water, beat well. Add one more cup water and beat well. Batter will be watery. Heat griddle, grease with oil and pour like pancake (medium size). Do not over cook. They stay white.
Filling
Prepare filling by mixing all the ingredients together. Fill each crepe with two tablespoonful of filling in the middle of crepe. Roll up and place seam side down in a glass baking dish or pan which has a thin layer of tomato sauce. Place side by side in the dish or pan. Cover with sauce and bake uncovered for 20-30 minutes at 400 degrees. Let stand a few minutes after baking before serving.

These are made with crepes instead of pasta noodles or dough. They are not difficult to make and are nice and light to eat.
