plenty of onion for 2 more cups of broth.
saute onion in oil/butter.
add broth. add sherry. add thyme or tarragon, salt & pepper. Take oven proof bowls, put bread in bottom, top with soup, top with cheese. Broil until cheese is lightly browned.

PS: Ya' know how those store bought baguettes get rock hard really quickly? Don't throw it out. Put it in a heavy bag and beat it with your meat tenderizing mallet to make LARGE chunks. Use them in your soup now or save them (in the freezer?) for later.
Another note on the bread. If you choose to make a fresh loaf of French Bread in your bread maker, just toast the slice before you put it in the bottom of your bowl. :)
