Roast Pork
Nicely seasoned and really juicy roast pork. The aroma when the roast is cooking is so mouth watering!

Ingredients
Roast Pork Preparation
Rinse the roast in cold water under the faucet and pat dry with paper towels.
Coat shallow roasting pan with 1/2 tbsp olive oil. Use rest of olive oil to evenly coat the roast.
In a small bowl stir together basil, garlic powder, pepper, salt, mustard powder, cinnamon, nutmeg and sugar to make a dry rub.
Massage the rub into the meat coating all the way around and both ends. Cover pan with plastic wrap and refrigerate for a minimum of 4 hours.
Preheat oven to 450 degrees.
With a meat injection needle inject the roast evenly throughout with apple juice.
Thread the sprig of rosemary under the first and last strings that hold the roast together across the top. Tuck slightly into the centre cut.
Roast uncovered for 15 mins. Reduce heat to 350 degrees and continue roasting uncovered for another hour and 45 mins. Pork requires about 18-20 mins / lb; use a meat thermometer to ensure it is done. The meat thermometer should read 170 degrees when inserted into the thickest part of the roast.
If you like, use the drippings from the pan to make gravy for mashed potatoes. It goes great with maple style baked beans and homemade apple sauce.
