Another from one of my wife's old cookbooks.
Lay the fish in a baking dish and sprinkle salt and pepper over them.
Cover the fish with shrimp, mussels, sauteed mushrooms and place some around the fish, add the melted butter, lemon juice and wine and bake until done, 15 to 20 minutes 350? oven.
Scald the cream and add to the beaten egg yolks and pour over the fish. If sauce is still not thickened, a little cornstarch may be used.
Sprinkle with Parmesan and a little chopped parsley.
My wife determines if a dish is a keeper or not and this one is.
I did make a few substitutions because I was missing a few things. Halibut for the sole. 16 shrimp no mussels on hand. Lime for lemon juice. Next time I would cut the butter and wine in half.
