very easy recipe.
1. Preheat oven to 400?.
1. Prepare seafood: pat dry and then season with salt and pepper and put in casserole dish; set aside.
2. Crush Ritz by putting in baggy or bowl and using whatever to crush into little pieces
3. Melt butter in microwave; add butter to Ritz crackers with parsley, garlic powder, parm cheese, and light cream. Let Ritz mixture sit for about 5 minutes for liquids to get absorbed into crackers; should be nice and thick crumb mixture; Spread onto fish or scallops.
4. Bake for about 15-20 minutes (scallops...watch, scallops cook quickly) or 20-30 minutes for fish.
NOTE: if making with scallops, make sure you remove that extra piece of muscle (foot) on scallop; very tough when cooked.
For variety: have added drained can of crabmeat either to top of Ritz mixture or mixed it in with the cracker mixture.
