Nice combination of sausage, ham, and crab meat
Slice sausage and cube ham. Chop onion, celery, bell pepper, and garlic.
In a dutch oven saute sausage and ham until they begin to brown, drain fat (most), add butter, chopped vegetables, and garlic and saute until soft.
Stir in chicken stock, Rotel including juice, and stewed tomatoes drained, and bring to a boil.
Add Zatarans Jambalaya Mix (should be just over 2 cups), cover and cook until rice is almost done. Can substitute 2 cups brown rice for Zatarans but will need season with creole seasoning like Tony Chachere's.
Add crab meat (optional) and cook until done (if uncooked) or until warm (if cooked) (maybe 5 to 7 minutes in either case). Can substitute shrimp for crab meat or even add both if you like. Overall this is a pretty flexible recipe.
I like to use leftover holiday ham and Rabideaux's smoked sausage. The sausage is exceptionally smokey, perfect for this recipe, and can be ordered online.
