1) Cook penne according to package directions. Strain.
2) Meanwhile in a large pan, sauté onion, garlic, and peppers in olive oil. Stir in thyme, salt, and pepper. Add vegetable broth and bring to a boil. Blend in feta cheese until creamy.
3) In a large bowl, combine pan mixture and penne. Top with oregano before serving.
