A great side dish and so simple to make.
Preheat over to 375F.
Toss olive oil, garlic, rosemary, salt and pepper in a bowl large enough to accomodate all of the potatoes.
Halve or quarter (depending on size) the potatoes. Note - for a better presentation, cut a band of the skin off of the potato at the "equator" rather than halving/quartering.
Toss the potatoes in the olive oil mixture and then place on a foil-lined baking sheet.
Bake for 40-50 minutes, flipping half way through.
Let cool for 5 minutes and then serve.
