Mix ingredients together in a small sauce pan. Bring to a boil over medium heat, them immediately remove from heat and allow to cool. Refrigerate.
Topping -
Break Ramen noodles apart. (Discard seasoning packet.) Spread topping ingredients in a single layer on cookie sheet. Bake for 10 minutes at 350 degrees. Allow to cool.
Add topping and dressing to chopped bok choy just before serving.
