Healthier banana bread. Recipe makes two loaves in 9x5x3 loaf pans.
Preheat oven to 350°. Spray olive oil on two 9x5x3 loaf pans.
Whisk together first six dry ingredients in separate large bowl.
In a mixer, mix together the unsalted butter, brown sugar and Stevia.
Add eggs one at a time to butter and sugar mixture. Add remainder of ingredients.
Slowly add dry mixture to moist mixture in mixer.
Divide dough in 2 - 9x5x3 loaf pans and bake at 350° for 1 hour.
Insert long cake tester to test for doneness (should come out dry).
After you remove them from the oven let them rest in the pans on a cooling rack for at least 5 minutes. You may have to run a knife along the edge to loosen the bread before removing.
