Beef Barbeque Slow Cooker Over Night Recipe
1. In a 4-quart or larger slw cooker, place a 4lb (well-trimmed) beef rump roast. In a medium bowl, mix 1 1/2cups barbecue sauce and 1 cup root beer; pour over beef. Cover; cook on low 10-12hrs.
2. About 20min before serving, remove beef from cooker; pour juices into a large skillet. Cook over med-high heat about 15min, stirring occasionally, until juices are thickened and reduced to about 3 cups.
3. Meanwhile, using two forks, shred beef; return to cooker.
4. Stir another cup of barbecue sauce into skillet; pour over beef in cooker. Stir in a dash of coarse salt and pepper to taste.
5. Serve barbecue on whole-grain buns.
