Recipe received from CSA farm to go with Chinese cabbage delivery
1. Preheat oven to 350 (F). Crush Ramen noodles in package before opening (or, remove and put into bowl or ziploc bag to crush). Pound cashews into pieces as well. Mix both together on a jelly roll pan and spread flat. Toast the noodles and nuts in oven until golden brown, about 5 minutes. Remove from oven and set aside.
2. In large bowl, combine the shredded cabbage and chopped green onions.
3. In a small bowl, whisk together sugar, oil, vinegar, and soy sauce.
4. When ready to serve, combine nut mixture with cabbage mixture. Toss with dressing. (Do not add nut mixture too far in advance or noodles and nuts will get soggy.)
The dressing is a little sweet for my family; I will be using less sugar in the future. But everyone else loved it "as-is", so add sugar to your taste.
This is a good make-ahead dish. Prepare all the component, but keep separate until ready to serve. A quick toss and it's ready to go.
