Bacon bits, sauted veggies, and chicken make this a homestyle meal.
Heat oven to 400. Lightly coat 2-qt baking dish (or separate to make 2 - 8x8 dishes).
Cook bacon in skillet until crisp. Remove to a paper lined plate. Reserve 3 tablespoons of drippings. Add carrot to drippings and cook until softened, about 4 minutes. Add mushrooms and celery, and cook until tender about 4 minutes. Transfer to large mixing bowl.
Stir rice, chicken, bacon, sour cream, almonds, parsley and thyme into vegetable mixture. Transfer mixture to baking dish (or dishes).
Sprinkle with combined cheeses. Bake for 25-30 minutes, until cheese begins to brown.
I make two separate 8x8 casseroles. I cook one now, and freeze one for later.
