A fresh Mexican soup, great for groups or families. Quick and easy.
In a large pot brown ground beef. Add peppers and onion. Then seasoning packs. Mix in tomatoes, beans, and corn. Simmer these for 5-10 mins. Then add beef broth and remaining ingredients. Simmer for 20-30 mins on medium heat. Add salt and pepper to taste. The longer simmers the better your soup will turn out. Serve topped with Monterey Jack and Cheddar, Frittos, and Sour Cream.
Simmer as long as possible.
