This is best recipe I have for baked whole fish. I live on an island and knowing to cook fish, is a must.
Soft fish with an amazing flavour.
PREHEAT OVEN at max for about 10-15 minutes.
Cut a piece of aluminium foil, big enough to be able to pack the fish in it and be covered completely.
Rub the fish very good with seasoning and if you have time leave it like this for about 15-20 minutes.
Cut all vegetables and mix them together with 1 TBS olive oil (just to soften them a little). Add all vegetables on top of fish, under and in the middle and sprinkle the olive oil on top of everything.
Cover the fish completely in foil and put it in the preheated oven for 20 minutes.
After this time, open the foil on top (just so you can see the fish) and let him bake for about 5-7 minutes more.
