Custard: Mix all but cream, cook until thick. Let cool, stir in cream.
Prep:
Roll out dough as you would pie dough, not quite 1/4" thick. Put in greased pan without stretching dough. Pinch down against inside edge of pan. Do not let dough rise before filling; spread layer of fruit or cottage cheese immediately on the bread base. Then, top with custard appropriate to the kind of Kuchen you are making.
Top with crumb mixture.
Bake at 350 degrees F for 10 minutes, then at 325 degrees for 20 minutes, until filling is almost set. Remove from oven, let set until filling becomes firm. Then, slide the Kuchen out of the pans, onto plates. Or, wrap in foil and freeze (these freeze well). To serve a frozen Kuchen, heat in a 250-degree oven until thawed and just warm.
