This chicken and potatoes dish has hints of garlic, oregano, lemon and mint.
1. Mix olive oil, lemon juice and crushed garlic in a medium bowl.
2. In a separate small bow, combine oregano, mint, pepper and salt.
3. In another medium bowl, combine breadcrumbs, Parmesan cheese and half of the herb mixture. Mix well.
4. Dip each chicken thigh in lemon juice / olive oil mixture until coated. Then roll in breadcrumb mixture.
5. Place thighs in a single layer in a greased 9 x 13 pan. (Or spray the baking dish with non stick spray.)
6. Toss potatoes in the remaining lemon juice and olive oil mixture. Arrange potatoes around the chicken thighs.
7. Sprinkle the potatoes with the remaining herb mixture.
8. Bake uncovered at 450 degrees for 30-35 minutes, or until chicken tests done and juices run clear when pierced with a fork, and potatoes are tender.
You can also just do the thighs without the potatoes. In that case, mix all the herb mixture with the breadcrumb / parmesan cheese mixture, before coating the chicken, and place in an 8x8 pan.
This recipe is easy to make larger if you have more guests coming. You can double it, etc.
You don't have to use redskin potatoes. You can use regular Idaho baking potatoes, Yukon gold, or whatever you wish.
If you are baking something else in the oven at the same time, at a lower degree (350 for example), then you can still do the chicken and potatoes, but increase the time to around 45 minutes to an hour.
