These are the best oatmeal cookies I have ever had. My mother developed this recipe, it is our family's favorite.
Preheat oven to 350F. Place raisins in saucepan, cover with cold water. Place over low heat and bring go a simmer. Simmer, covered, for 5 minutes. Remove from heat, leave lid on and let steep. Cream crisco and sugar, add eggs and beat well. Add baking powder and black walnut extract to creamex mixture, mix well. Add oatmeal and beat well. Drain raisins reserving 1/3 cup of raisin water. Combine 1/3 cup raisin water and baking soda, add to creamed mixture and beat well for 5-10 minutes. Add flour to creamed mixture, combine well. Add black walnuts and raisins to creamed mixture and combine well. Add additional flour if needed to ensure batter thick enough. Drop by teaspoonfuls onto greased cookie sheet. Bake at 350F for 10-15 minutes or until golden brown. Add flour if cookies spread more than desired.
We don't want these cookies to spread when baking, we prefer a fluffy tender cookie with juicy raisins.
